Horseradish

This week I finally saw some horseradish leaves poking up through the soil.  This is the crop that I am most excited about as I love horseradish sauce, so to be able to make my own extra hot sauce would be awesome.

I planted 4 roots, and three have appeared so far.

Here is the first root, unfortunately it is coming up through a few radishes, but they'll be gone and eaten within a few weeks with any luck. 

I'm a little worried, as after I planted them I read that the Horseradish plant is very invasive and can take over a garden!  I think depending on the results at the end of the year, I'll dig up all I can and decide next spring whether to replant or not.
